Product Review – Ball FreshTech Electric Water Bath Canner

I am super excited that my new electric water bath canner is here and I get to tell you all about it! You heard it here first people! If you haven’t seen this yet, Ball just came out with this new product, the FreshTech Electric Water Bath Canner. I got mine yesterday via preorder, and they are now in stock on amazon! Now, this is not to be confused with their other electric canner the Ball freshTECH Automatic Home Canning System, which in my opinion (although I actually haven’t used it), is not nearly as exciting of a product. It’s got half the capacity and is twice the price. And you’re restricted in many ways by their recipes. No thank you. But that’s not what we’re here for. So, let’s talk about this new electric water bath canner. Full disclosure, yes, if you buy it through the link above I will make a few bucks, but this is my honest to goodness review of the product.

Yes, it has some obvious pros, but I had a few other things in mind I also wanted to test, and I wanted to make some comparisons between it and a regular water bath canner, and also the Weck water bath canner (which I have not successfully been able to find for sale, but if you can it’s typically more expensive than the Ball one by nearly double).

OK so let’s start with the obvious pros:
– You free up a burner (definitely a huge pro in my books – I am a notoriously large batch canner)
– There is a spout for draining the hot water
– Good capacity of 8 pints/ 7 quarts (more on this is a minute)
– Pretty light
– Nice heat resistant handles (including the lid handle)
– Supposedly more energy efficient, but I can neither confirm nor deny that
– Can be used for other things than canning (but of course so can a pot)

So those things are all well and good, but there are a few other things I was curious about. For one, I wanted to know if it heats up as fast as the canner does on the burner. Sadly, the short answer is no. But I’m not terribly upset about it, because I’ll just get it going sooner than I would the normal water bath canner. If you’re interested though, this is what I did. I filled each canner with jars, 95 F water, and turned them to high. My canner on the burner was at a full rolling boil in 36 minutes and the Ball canner took a full 57 minutes. So I was a bit bummed by that. Then I reread the instructions and they said that you were supposed to put the “steaming rack” (pictured below) on top of the jars and that actually helped it boil faster. Hmm OK if you say so, let’s try that. So I decided to try from “raw pack” temperature (140 F) to boil, and see how long that took, since I wasn’t spending another hour on this test. Luckily, I had also recorded the temperatures at 5 minute increments in run one so could compare. This time it took the burner canner 22 minutes and the Ball canner 36 minutes to go from 140 F to a full rolling boil. In comparison 140 to boil took 39 minutes without the “steaming rack” in there. Not sure that’s significantly better but I guess in theory it could help a bit. If you are hot packing (which I usually am), your water is around 180 F to begin with. To compare there, the burner canner went from 180 F to boil in 12 minutes, and the Ball canner too 21 minutes. So, take it or leave it, at least compared to my burner, the Ball was slower. However, if you have gas or a flat top range, I can’t be sure how it will compare. One time I canned on my neighbours flat top range and it took FOREVER to boil.

My next question was: can I maintain a specific temperature? Most specifically I wanted to know whether I could maintain 180-185 F for low temperature pasteurization of pickles. More on that here. I was a bit bummed that they weren’t actual temperatures on there, but if it maintains something pretty constant that’s OK in my books too. So I tested what it maintains at low, medium, and high (the canning setting is for a full boil), and I tested if I could get it to maintain 180 F easily. This experiment I’m pretty pleased with. For my unit (of course yours could differ), it maintains temperatures of 120 – 125 F at low, 145 – 150 F at medium, and 190 – 195 F at high. I was able to maintain 180 F about one and a half “ticks” below high, as in the picture below. Of course, I’m at sea level and other things could affect where your 180 F is, but this is going to make low temp pickling AWESOME. Big win on this one I’d say. You certainly still need a thermometer to be sure of the temperature, but this was so much easier than finagling with the burner setting. It can be very easy to overshoot 185 on the burner, which kind of defeats the purpose of low temp processing. The beauty of this canner is the heat turns off and on to maintain the temperature. You can hear it come on too, so if you were trying to find 180 you could easily turn it to high, and then turn it down when you were getting close. You’d hear the burner turn on and off so you could find that sweet spot. So excited for pickling now!

Another thing I was happy with was capacity. Like I mentioned, the other Ball autocanner has quite a small capacity. They list this one as 8 pints or 7 quarts, and they do mention in the manual that you can fit more than 8 pints, but they call the capacity 8 to allow for adequate water circulation around the jars. Pictured below I have 10 pints in there, and they didn’t seem super snug, so take it or leave it. I think that I will can with 9 in there on occasion – if I can fit 10, I’d say 9 have adequate circulation. It’s partially the nub from the spigot that’s the issue. The Weck does fit more, but like I said, good luck finding it, and it’s more $$.

Overall, despite the slower heating time, I am happy with the purchase of this canner. I think that heating time may be the only real downside. The only other thing was that the rack on the bottom seemed like it could have been a tiny bit larger, but perhaps that would have made it harder to fit it past the nub for the spout. Not sure. But especially for me having a small kitchen, it’s going to be awesome to not have the canner on the stove. Or if I’m doing huge batches I can have one on the stove, rather than two. I may even use it on the kitchen table, and although that means I still have to lift it to the sink, I could drain some water into a pot or something, and I think it will be worth it. Thanks Ball, good invention, I’ve been waiting for something like this!

Chicken broth – two ways to make it and two ways to preserve it

The winter months definitely have less opportunities for food preservation than summer, but if you are itching for some canning, now can be a good time to stock up on bone broths. Yes, horrible, horrible pun intended. Making chicken broth is a great way to prevent any part of the chicken from going to waste, it’s good for you, and it’s way better than store-bought. Cook up a chicken or two, and hang onto the bones and scraps.

Ingredients:
1 chicken
2 stalks celery
2 medium onions, quartered
10 peppercorns
2 bay leaves
1 tbsp salt

How it’s made:
Combine the bones and any leftover scraps of meat in a large stock pot with the rest of the ingredients and cover with water. These ingredients are as written in Ball, but you can be a bit flexible in making broth – you could also use a carrot if you want, throw in some parsley or garlic, or if you prefer, just make straight bone broth with no added vegetables. Bring to a boil, then reduce to a simmer. Now, just wait. Occasionally taste the broth; leave it simmering until it reaches the desired strength of flavour. Typically, I let it simmer for the better part of a day.

A second way to make chicken broth is in the crock pot, and I can’t believe I didn’t think of it myself. I recently purchased 100 Days of Real Food, which is a great book by the way, and in it Lisa has a recipe for overnight chick stock in the crock pot. Dang, why did I never think of that?! Typically, I make a chicken for dinner, chuck the bones and leftovers in the refrigerator, and make the broth the next day because I don’t want to leave my burner on while I sleep (especially on my current stove – don’t get me started). This method is just brilliant because you can leave it over night and deal with it the next morning.

To remove some of the fat more easily, cool the broth in the refrigerator, and then skim off the fat.

Strain off the bones and vegetables.

Broth can be preserved either through canning or freezing. If freezing, simply place the broth in a freezer safe container, leave some head space for expansion when it freezes, and place it in the freezer.

If canning it, prepare your pressure canner, jars and lids, and reheat the broth to boiling. Fill the jars, leaving an inch head space. Wipe the rims, apply the lids, and tighten the bands finger tip tight. Place the jars in the canner containing three quarts of hot water.

As an aside, broth can vary in colour by what you have in it, how well you strain it, and how long you cook it, but it’s really just a matter or personal preference. I generally don’t strain it until it’s super clear (like though cheese cloth, just through a fine strainer), but if you want it nice and clear go for it.

With all the jars in the canner, lock the lid in place and bring the water to a boil. Once a steady stream of steam is coming out of the canner, time 10 minutes of vent time, and then place the weight on the vent pipe. Bring the pressure to 11 psi (sea level with a dial gauge canner). Process pints for 20 minutes and quarts for 25 minutes. At the end of the processing time, turn off the heat and wait for the pressure to drop completely. Remove the weight, wait 10 more minutes, remove the canner lid, and remove the jars to a hot pad or towel. Cool 12-24 hours, remove bands, check seals, wipe clean, label and store.

Gifts from the Kitchen

If you love food preservation as much as I do, you’ve probably given some food related gifts to family and friends in the past. Mostly I’ve given people things like jams, jellies and pickled goods I’ve made, and decorated cutely as below, but there are so many other gifts that we can give from the kitchen! So, with the holiday season coming up, the Master Food Preservers offered a class called “Gifts from the Kitchen” offering some inspiration and ideas for gifts for the various people in your lives. Teaching this class was a blast and people really had a good time so I wanted to share some of the ideas here that we talked about, and hopefully inspire you to get thinking about some gifts you might like to make in the next month. I thought I would get this post up today in honour of “cyber Monday”, so that maybe we can also be thinking of some homemade gifts on this massive shopping day. Maybe you could make something to accompany or replace a purchased gift, and I’ll offer a couple ideas here to pair a purchased gift with a homemade one.

The most common gifts from the kitchen of course are canned goodies that you’ve made with love. I like to decorate them with little pieces of cloth, which are actually just quilting cloth squares or scraps from the craft store. Tie a cute ribbon around it and grab some cute tags, and presto gifto! However, when gifting preserved items there are a few other things you should remember. Of course always make sure you are following safe, tested recipes. If you want to play with things not tested that’s your own business, but always be safe when gifting items. It’s a nice touch to add an ingredient list and any information you think people may be interested in knowing, such as when the food was canned, how it was canned, whether it’s low sugar, things like that. It can be nice to put your initials on there or something too so people remember who it’s from (I know people trust my canned goods but maybe not everyone’s). If you want to give canned gifts but don’t have anything on hand, we talked about a few different things that you can still preserve now, which are pictured below. These include, pepper jellies, citrus jellies, jams or marmalade, cranberry jams or jellies (or check out the cranberry mustard I just posted), apple butters and applesauce. The green tomatoes are probably done for most of you now, but green tomato salsa is also an option if you still have some kicking around. There are also a number of other mustard recipes in the Ball Complete Book of Home Preserving that look really intriguing and can be prepared at basically any time of year, so I plan to try out some more of those soon too. I think it would be really nice to give a couple different ones. The 4 oz jars get harder to find in some areas this time of year, but luckily they are still online here for about the same price.

Great! What else can we gift? Here is a sampling of some of the things we talked about or made in class, and I’ll talk in a bit more detail below about each of these. Here we have, from left to right, lime jelly and pepper jelly, a dry bean soup mix, a snowman of hot cocoa, flavoured vinegars and two different spice rubs in the front.

We had a number of stations where people got to make items to take home, and my station was hot cocoa. You had a couple options on how to arrange your cocoa into the jar, but if you search the internet there are a ton of other ways to do it too, and they are so cute and creative!

I did mine as a snowman (the guy on the left). I got this idea from my nana, who made them a number of years ago for Christmas gifts, but I made mine a little differently, using just one canning jar. All I did for mine was mix 1 part cocoa powder to 2 parts sugar, but you can also follow other recipes with dried milk in them as well. The one we did in class was 1/2 cup cocoa powder, 1/2 cup dried milk, 1/2 cup sugar, pinch of salt, 1/4 cup chocolate chips and 1/4 cup (or to fill the jar) mini marshmallows. Then, make a head out of marshmallows and decorate the jar with a scarf, face and hat made of cut out construction paper and a painted band and lid. Adorable. One of the girls in the class made this girl snowman who became buddies with mine.

Get creative and have fun with it! All I did was spray paint lids and bands black, draw on a face and glue on some buttons and a scarf and he turned out adorable.

Alternatively, you can make some cute layers in the jar or bag you put it in.

Another station that we did was a dried soup mix. Simply layer a variety of beans in a jar. We did equal parts kidney beans, white lima beans, black beans, garbanzo beans, pinto beans, great northern beans, small red beans, black eyed peas, barley, and then half as much of the split peas and lentils. To fit in one pint jar, you need 1/4 cup of each (about 1/8 for the lentils and split peas). We then also included a spice packet, and here’s an example of what it could contain: 1/4 cup minced dried onion, 2 tbsp dried celery (we dried our own to be even more homemade), 1 tbsp bouillon (vegetable, beef, or chicken), 2 tsp dried basil, 1 tsp dried oregano, 1 tsp ground red pepper, 1 bay leaf, 1 tsp salt, 1/2 tsp black pepper.

If giving a gift like this, it would also be nice to include some sort of recipe on how you would recommend preparing the soup. Including a recipe such as this one would work great. I prepared the spice packet to match the spices in this soup, but adjust this however you enjoy your bean soup, and share a family recipe or something. Additionally, a nice pairing to a gift like this could be your favourite cookbook. They turn out quite pretty when layered in the jars rather than blended.

Another station we did was preparing spice rubs. The one pictured is a steak rub adapted from Family Circle Magazine (November 2012). It contains 1 tbsp kosher salt, 2 tsp smoked paprika, 2 tsp dried oregano, 1.5 tsp dried minced onion, 1 tsp dried minced garlic, 1/2 tsp ground cumin, 1/2 tsp red pepper flakes.

Simply stir all the ingredients together and package it in a cute way, such as in a little baggie or jar with a bow. Be sure to include the ingredient list, and perhaps a suggested usage. For example, Steak rub: rub 1 tsp spice mix onto both sides of a 1.5 pound steak and grill or broil as desired. A great idea for gifting this might be give it to someone who loves grilling, and include a book on grilling along with the homemade spice rubs.

Another rub that we did that is really delicious is a lemon cumin rub. It contained: 1/4 cup ground cumin, 2 tbsp grated lemon peel, 2 tbsp paprika, 2 tbsp ground cardamom, 1 tbsp ground cinnamon, 1 tbsp coarse ground black pepper, 1 tbsp cayenne pepper and 2 tbsp dried oregano. This rub is great on chicken. To prepare, dip meat in a mixture of 1 tbsp brown sugar to 2 tbsp water, then apply 1 tbsp of the rub. Let it stand in the fridge for 4-6 hours, then grill. If you are going to do spice rubs though, it can get a little spendy, so buying in bulk is always a great idea. Use home dried herbs too where you can for an added homemade touch. Some things you won’t have though, and they can be hard to find cheap (or at all) so I really like to get things from Mountain Rose Herbs. They have a huge herb selection and they also have bulk discounts if you are buying a ton. They also have some really fun salts and peppers which could also by themselves make fun gifts. Fill a few different 4 oz or 8 oz jars with a variety of different salts and peppers and decorate them for someone who loves to cook.

The final station was an apple crumble recipe from The Dehydrator Bible (which itself is a great gift). This is a great gift for a camper and includes 1/2 cup dried apple slices (dry your own at home in your dehydrator), 1 tbsp brown sugar, 1/4 tsp dried lemon zest (optional), 1/4 tsp ground cinnamon, 1/2 cup crumbled oatmeal cookie (or we used granola cereal). Place the oatmeal in one bag and the rest in another, and place in a foil tin for campfire baking. This one only stores well for a month or so, so keep that in mind. To include serving instructions, add a tag that says to serve you will add 3/4 cup of water to the apple mixture, and let stand for 15 minutes. Cook for about 10 minutes over the fire (or on the stove on low) and once apple reach the desired softness, add the cookie crumble and serve.

Those are all the gifts from the kitchen that we made in class, but there are numerous other things that you could gift. One example I posted earlier was flavoured vinegar. A lovely pairing to this would be a salad dressing mixer. I have a very similar one to the one linked here (couldn’t find the exact one) and I love it. When I try and mix salad dressing by hand I often find I get too much oil onto my salad and not enough vinegar, so this is one of those silly toys I once bought myself. There are also some fun bottles with recipes on them, but I can’t vouch for the recipes so much because I always make my own with a lot less sugar.

Another thing I did last year to give some of my favourite things (with a jar theme of course) was to give people my favourite teas in a ball jar. Pick up some different loose leaf teas from Mountain Rose Herbs, or your favourite local tea shop, and perhaps include a little tea ball with it. OK, that’s all I have for now, and I need to get to bed, so I hope you are feeling inspired! I just wanted to end with a couple of final thoughts for purchasable gifts for the culinarily (ya that’s not a word) inclined people in your life. I really enjoy The Flavor Bible, which is a book full of tons of inspiring flavor combinations. It’s not recipes, but basically a fun index of the best flavor combinations for every type of food out there. It’s inspired a number of great recipes for me and was a great birthday gift last year. Of course for the canners in your life I am always a fan of the classics for safe and tested recipes, which are also of course delicious and amazing: The Ball Complete Book of Home Preserving, or the smaller Ball Blue Book. Or the newly released (I just got it finally yay!) So Easy to Preserve. Last but not least, my second favourite way to preserve is dehydrating, so I would recommend both dehydrators and The Dehydrator Bible as excellent gifts. Flavoured Vinegar

Have you ever bought a flavoured vinegar from the grocery store? A delicious herb vinegar, or perhaps a fruity or berry vinegar? They are crazy expensive compared to buying a gallon jug of vinegar and making your own at home. Perhaps they aren’t even available in the grocery store you typically frequent. Even if this isn’t something you’d necessarily typically buy, I bet you would find many uses for them, and they make a lovely gift. Flavoured vinegars make delicious salad dressings, marinades and sauces and are a great use of excess herbs in the garden too. I just picked a ton of sage, dill, and rosemary because it got way out of hand in my garden and made an herb vinegar from it. It’s really quite nice! I wish I still had oregano and basil too! Flavoured vinegars are simply made from soaking fruit or herbs in vinegar until they reach the desired strength of flavour. The OSU extension publication on this topic is great, SP 50-736, and here I’ll show some pictures of the ones I’ve made so far – herb, strawberry and raspberry. Some of these things are off season, but you can still use frozen fruit, things that are still in season, like citrus and cranberries, garlic and peppers, or perhaps you grow herbs inside, still have some growing, or have some you dried or froze. The options are endless, so let’s get started!

Here are my strawberry and raspberry vinegars on the day I was straining them. Such a beautiful red colour!! Strawberry one is partially poured off to strain.

For making flavoured vinegar, the easiest thing to use is just a quart or half gallon canning jar. Any glass or food grade plastic container will do though. Wash the jars and sterilize them by boiling for ten minutes. Select whatever type of vinegar you’d like to use and buy it in bulk by the gallon. I typically just use white vinegar, but white wine vinegar is very nice as well, or apple cider. Or go ahead and get crazy and mix vinegars together. I remember when we made them in Master Food Preserver class Janice saying that flavoured vinegars are awesome because there are basically no rules. It’s certainly much more true than canning. Keep things sanitized and clean but otherwise you can get creative.

For flavouring your vinegar, you’ll use herbs, fruits, or vegetables. For herbs you want a few sprigs of fresh herb per pint. Wash, pat dry, add to the jar and cover with vinegar. If using dried, use 3 tablespoons of herbs per pint of vinegar. For fruits you can use fresh or frozen and basically just fill your jar about 2/3 or so full with rinsed fruit and fill the jar to cover with vinegar. You want about a 1:1 ratio of fruit to the vinegar covering it. Feel free to add extra spices, and get creative. Vegetables, such as peppers, onions and garlic can also be used to flavour vinegar. Get creative and have fun. Basically fill your jar and let them sit.

Leave your vinegar alone for at least a couple of weeks. Three or four weeks is enough to achieve a nice flavour, but longer isn’t going to hurt anything. I made my strawberry one in May and didn’t get around to straining it until November. It’s dang delicious. Basically you can strain it whenever you taste it and are happy with the flavour. If it gets too strong, simply dilute it down with more of the vinegar you had used to make it in the first place.

When it’s time to strain, sterilize a jar of the same size that you have your vinegar in, place a funnel in the jar, and add a coffee filter or cheesecloth. Pour the vinegar into the filter.

It can take a while to strain so be patient and change the filter out a couple of times if you need to. Depending on what type vinegar you made, the filters may get clogged. Herb vinegars just with large leaves tend to drain fast but if you have some fruit that breaks apart it may take a little longer and clog up the filter. Just be patient and swap it for a new filter a couple of times.

A strainer and a coffee filter will also do just fine.

Keep going until you get all the vinegar strained. Then store it in whatever cleaned and sanitized containers you would like to.

These are the jars I’ve used to store my vinegar. The little ones are actually from tonic water and the large one is an old marinade jar. You can also just store them in canning jars of course. I would go for glass over plastic personally. To keep track of what I have, I love adding cute labels to things, and also when giving them as gifts. For these I’ve used the Avery 22922 labels which are 2×2 inches. I love them because you just download the template from their website and print whatever you want on the label. The round ones are Avery 22926. They’ll fit on a regular mouth jar, just barely so you have to be careful applying them, but they are awesome for wide mouth lids. They also sell 2 inch diameter ones rather than the 2.5 inch, Avery 22807. It’s always a good idea to label with all your ingredients as well. Label with your base vinegar, fruits, herbs, vegetables or spices added. This would be cute as a back label. It could also be nice, if giving this as a gift, to include a recipe for what you might use the vinegar for, such as a favourite salad dressing recipe.

They are also really cute stored in fancy jars. I think I might get a set of these ones. After straining them you can also add another sprig of herb for decoration if you so desire.

To maintain flavour and colour, you can add a small amount of sugar as well, but I don’t generally like to do that or feel it’s that necessary. Store in a cool dark place. You can keep it in the refrigerator if you want, but it is not necessary. You can also actually can it in a boiling water bath canner for 10 minutes, but it’s pretty shelf stable as is so that’s also not mandatory. But of course don’t use it if off flavours, colours or odours develop. Enjoy!

Queso Fresco Cheese

Back in week 5 of my Master Food Preserver class posts I had mentioned that we learned how to make queso fresco cheese but never posted the full instructions, so here they are! This one pictured below had some added herbs. Mmm. These instructions come from PNW 539.

The first important thing with cheese making is to sanitize all your equipment. Cheese won’t be boiled, so sanitize all your spoons, knifes, bowls and other equipment by boiling it or soaking it in a bleach water solution for 2 minutes (one tablespoon bleach per gallon of water). You should also use pasteurized milk to make your cheese. If you have raw milk you can home pasteurize it by heating it to 145 F for 30 minutes.

On to the making of the cheese. To make cheese you need a thermometer, and it needs to be correctly calibrated. You can check it by placing it in ice water to ensure it reads 32 F or 0 C.

Ingredients:
1/2 cup cold tap water
Junket Rennett tablet
One quart cultured buttermilk
Two quarts pasteurized milk
7 tsp white vinegar
1 3/4 tsp salt

First, place one Junket Rennett tablet into the half cup of cold water and let it dissolve.

Meanwhile, combine the buttermilk, milk, and vinegar and mix well. Heat to 90F and then remove the pan from the heat. Add the dissolved rennet and mix for about two minutes.

Let it stand for 30 to 40 minutes, undisturbed, until the curd is firm. Once firm, cut the curd into one inch cubes. This seems a bit odd, like you are cutting a liquid, but just go with it. Run the knife through at inch ish intervals. Let stand five more minutes. Heat the curds and whey again, to 115 F. Resist the urge to stir, just hold the thermometer carefully in there and heat it slowly. Once at 115 F, remove from heat and let stand five more minutes.

Pour the mixture through cheesecloth in a colander and allow it to drain for five minutes.

Then form the curd into a ball and twist the cheesecloth as pictured to gently squeeze out the whey.

Break the curds up in a bowl and add the salt. Mix, and let stand for five more minutes. Squeeze through cheesecloth once again. The herb cheese pictured at the top of this post was perhaps a little drier than queso fresco typically is, so don’t over squeeze the cheese if you want a moister cheese. Form the cheese in a bowl or other mold. Remove from the mold. Refrigerate for up to a week.

Easy peasy right? Just some heating and waiting and squeezing. This is one of the easiest cheeses to make, so if you’re wanting to get your feet wet in cheese making this is a great place to start.

Refrigerator Dill Pickles

The beginning and end of pickle season is the perfect time for making refrigerator pickles. My pickling cucumbers are starting to come in, but not in such huge numbers that I want to pull out the canner and process them, so the refrigerator pickle is really the way to go. These pickles also have the benefit of being so quick to make, and are often the crispest pickles you’ll have all year, since they don’t get processed in the canner.

This recipe is sort of from Ball, but I do it a bit differently, so you are also welcome to check out their recipe if you prefer.

Ingredients (for 1 quart jar):
1 cup water
1 cup vinegar (5% acidity, white or cider are great)
3 tbsp pickling or canning salt
2-4 cloves garlic
2-4 heads of dill or 1 tbsp seed
2-3 tsp mustard seed
1 tsp peppercorns
hot pepper flakes if you want hot pickles

Here’s how I made them:

Pick your cucumbers, wash them and make the pickles as soon as possible for the crispest pickles. Always remove a slice off the blossom end, because it contains enzymes that can soften your pickles. Slice your cucumbers however you desire. If you do spears or try and do whole cucumbers you will use more brine than if you do slices and pack them tightly of course, so usually I cut up my cucs to see about how much I have, then make a little extra brine just in case.

Combine the water, vinegar and salt in a saucepan and bring to a boil to dissolve the salt. If you want your pickles a little sweeter, add a tablespoon of sugar too. Remove from heat.

Heat your jars up a bit so they don’t break when you add in the brine. I just wash them in really hot tap water then leave them full of hot water while I get out the spices and peel the garlic. Then, empty the water. In each jar place whatever spices you desire. My ingredient list is what I do, but feel free to explore. Use the ratios provided of vinegar, water and salt, but do whatever you like with the spices. Don’t like garlic? (you’re crazy!!) then don’t add any. Want it really dilly? Add more heads of dill, or use both fresh and seeds. Want it spicy? Add a tsp or so of red pepper flakes. Have a pre-mixed pickling spice? Great, just use a tablespoon or so of that.

Fill the cucumbers into the jars, packing them in fairly tightly. Pour the brine into the jars to cover the cucumbers. Just make sure you either let the brine cool a little, and/or have nice warm jars still, because otherwise you could have jar breakage. The alternative (how Ball does it) is to heat up the brine with some spices in it, then throw the cucumbers in there after boiling it and let that cool to room temperature, then fill the jars. Your choice. If you did it my way, let the jars cool to room temperature, about a half hour or so, then refrigerate. I like to give the jars a bit of a shake a few times too, to distribute the spices more. You can also shake it up a bit every couple days, but it’s not essential. Enjoy the pickles after waiting 2 weeks, and within about 3 months of making them for best quality.

Blueberry Lime Jam

I do love blueberries on their own, but sometimes you just need a little something extra to really bring out the flavour of a berry. If you are looking for a jam that really kicks it up a notch, you’ve come to the right place. Adding the juice and zest of a lime or two really enhances the flavour of the blueberries and makes a delicious jam. This recipe is from the Ball Complete Book of Home Preserving. The only change that I make is to use a lower sugar pectin and less sugar, and two limes rather than one, but here it’s written as in Ball.

Ingredients:
4.5 cups crushed blueberries
5 cups sugar
Zest and juice of 1-2 large limes
1 package of regular pectin (or use low sugar pectin and adjust sugar accordingly)

Here’s what we did:

Prepare the canner, jars and lids. This yields around 6 half pints unless you reduce the sugar.

In a stainless steel pot, combine the crushed berries, lime juice, lime zest, and pectin. Mix well to combine all the ingredients.

Bring the jam to a full rolling boil over high heat, stirring constantly.

Add the sugar all at once when the boil is reached, and return to a boil. Boil hard for 1 minute, then remove from heat and skim off any foam.

Fill the hot jars leaving a 1/4 inch head space. Wipe rims, apply lids, and tighten the bands finger tip tight.

Process the jars in a boiling water bath canner, covered by at least 1-2 inches of water for 10 minutes, starting the time when the water reaches a full rolling boil. After the 10 minutes, turn off the heat, remove the canner lid, wait 5 minutes and remove the jars to a hot pad or towel. Cool the jars 12-24 hours, remove bands, check seals, wipe clean, label and store.

Master Food Preserver Class – Week 7

Week 7 of the Master Food Preserver class was a big old meat fest. We made jerky, smoked fish, pickled fish, and cooked up some summer sausage. This post will be the last in the Master Food Preserver series (I know, so sad), as week 8 was just our presentations and planning for the epic events of this summer. But don’t worry, there is still much more knowledge in that massive notebook of mine that I will continue to share with you all.

The first thing we did in class was make beef jerky. Beef jerky can be made safely at home, but there are just a couple of precautions that you need to take to ensure it is safe. The PNW 632  publication (click it for the link) is full of excellent information for making jerky, but I’ll give you the summary version here.

Bacterial contamination is a concern when making jerky, which is why it needs to be sufficiently heated to ensure any pathogens are destroyed. Three methods can be used to do this: post-drying heating, precooking the meat, and a vinegar soak. The post drying heating is perhaps the easiest, all you do is cook the jerky in the oven at 275F for 10 minutes after it is done. This is the method I tend to use. Preheating is done either by cooking the jerky strips in hot brine for about 1.5-2 minutes, which obviously doesn’t really work for ground meat jerky, or by cooking in the oven at 325F until an internal temperature of 160F (165F for poultry) is reached. You need a nice thin tipped thermometer for this. Lastly, soaking the meat in vinegar has been shown to be effective as well, but of course gives the jerky a very vinegary flavour. It’s also not been tested for game meats. And that’s basically all there is to it for safety. Jerky can be dried at the highest setting in a dehydrator (145-155F) or in an oven. But for the oven you really need to test if it can maintain those temperatures first.

Other notes about jerky:
– Yes, you can use other meats like poultry, fish and game meats.
– Just recently the recommendations have changed and it is okay to use ground meat, so long as you post dry heat it. Get the leanest meat possible, 93% lean or greater. The concern with ground meat is that the bacteria that could have been on the surface is distributed throughout by grinding, so use extra caution when making ground meat jerky.
A jerky gun can be useful for shaping ground meat into strips.
– To easily cut jerky from steaks, partially freeze it so you can cut even strips; aim for about  1/8-1/4 inch thick.
– To test for doneness, cool the jerky slightly and try bending it. If it bends and cracks it is done. You don’t want it to snap right in half or it’s over done but if it is bendy but still doesn’t really break it’s not done. Ya, it sounds a bit wishy washy, but you get the feel for it pretty quickly.
– When the jerky is done, condition it in a jar or other container, loosely packed. Conditioning basically just means they sit there for a couple says and equalize in moisture content. Shake it occasionally. If you see moisture collect in your container, they are not dry enough.
– Store jerky in a cool dark place. I like to just store it in a quart jar. It will keep for 2 weeks at room temperature, 3-6 months in the refrigerator, and up to a year in the freezer.

The next thing we did for meat week was to learn about smoking fish. As with jerky, this can be done safely at home, but there are precautions you should follow to ensure a safe product. Additionally, products need to be refrigerated or frozen when made at home as a precaution, even though you can find commercial products that are safely stored at room temperature. This is due to us not being 100% certain of the salt and moisture content when making it at home. Canning your smoked fish is also an option.

In summary:
– Smoked fish must reach an internal temperature of 150F (preferably 160F) and hold at that temperature for 30 minutes. This is important to kill bacteria such as Clostridium botulinum.
– Fish must be salted or brined, and since at home it is difficult to measure salt content, this is why as an added precaution the product must be refrigerated.
– Salt fish in a solution of 1 part table salt to 7 parts water, by volume. Brine for about an hour, although fatty or larger pieces of fish need 2 hours. Less fat = less brine time. Experiment with your fish – it should taste salty, but not unpleasantly so.
– After brining, fish is air dried until a pellicle (shiny, tacky skin) forms. This is usually at least 1 hour. After it forms it is ready to be smoked.
– Fish should be smoked then cooked. Smoke at 90F for up to 2 hours, then increase the temperature until the internal temperature of 150F is reached and maintained. This means the smoker temperature needs to be around 220-225F. If this cannot be achieved in your smoker, heat the fish in the oven after it’s smoked.
– Use hardwood for smoking, soft woods make unpleasant fish.
– If canning your smoked fish, just smoke the fish lightly, for up to 2 hours, then can immediately. Pints will need to be canned for 110 minutes. For full instructions follow the PNW 450 publication.
– Don’t store longer than 2 weeks in the fridge, freeze or can if you want to store it longer.

Honestly, I didn’t even taste the pickled fish because it seemed gross, but I promise I will, so for now I’m just going to provide you that publication, PNW 183, because I can’t really claim any insight here.

The last and meatiest product we made was summer sausage. In contrast with jerky, for summer sausage you want fatty fatty fattiness. It tastes pretty good, but I have to admit that I was a little bit grossed out making it. Honestly I don’t think it’s something I will really try making at home, but it was interesting to learn about. The extension service publication that you can refer to is SP 50-735. My only real original thought on the subject, since this was the one and only time I’ve experienced homemade sausage, is that I preferred the texture when we cooked it in the oven, as opposed to a pressure cooker. Both tasted very similar, but it was the texture that I found I preferred. So, that’s all I really have to say on that…check out those sausages.

Master Food Preserver Class – Week 6

I was a little sad that by week 6 of my Master Food Preserver class we were done with canning. Maybe that’s why it’s taken me so long to write this post 😉 But actually, I learned a lot about dehydrating fruits and vegetables, which was great because it is something I have a little less experience with doing at home.  Some of the fun things we either made in class or they had for demos are pictured below. From left to right we have: figs, green beans, tomatillos, canned apples that were dried, strawberries, zucchini, and regular apples.

One awesome thing about dehydrating is there are not too many safety concerns, as with canning. Things are more flexible, such as how large you want to cut pieces of food and how long you want to dry them. Now they should be sufficiently dry, but there is still a bit of flexibility there. Microorganisms and enzymes require water, so when you dehydrate food, you make conditions that are not favourable for food spoilage. It has been shown that pathogens can survive the food drying process, but there are actually no documented cases of people becoming ill from home dried foods, so it is a pretty safe preservation technique. You can also pretreat fruits with either an acid solution (citric or ascorbic acid), or sodium metabisulfite, and blanch vegetables to reduce this risk even further. Also, let’s keep meat in the back of our heads as a side note. Today I’m referring to drying fruits and veggies, and week 7 we talked more about drying meats, which have a couple safety steps that you need to remember.

Fruits and veggies can be dried using a dehydrator, your oven, solar dehydrators, or many things like herbs can simply be air dried. Commercial dehydrators, like this one which I have, can be a worthwhile investment if you are going to do a lot of drying. Using your oven often creates a lower quality product, partially because ovens are not really designed for the low temperatures at which you normally would dry things. The oven will also take longer and use more energy than a dehydrator.

Here are a few things we made in class.

So how does the nutrition of dried foods compare to fresh? One of the things that does become diminished in drying is the vitamin C, and this is because it is a water soluble vitamin, and drying eliminates much of the water content of the food. Doing pretreatments of fruit, such as the ascorbic acid dip, helps to reduce nutrient loss, preserves colour and flavour and increases the quality and storage life of dried foods. As an example of these pretreatments, fruits can be dipped for 10 minutes into pure pineapple, orange or lemon juice, or a mixture of 1/2 teaspoon ascorbic acid per quart of water. To destroy more of the pathogens and be extra safe, this can be increased to 8 teaspoons of ascorbic acid per quart of water. Be sure not to over soak the foods, or nutrients can end up being lost, and drying time will increase. For many vegetables, you should blanch as a pretreatment, just like when freezing, to destroy enzymes. Different vegetables should be blanched for differing amounts of time, but in general they should remain firm but still be tender. One of my favourite ways to dehydrate is by making fruit leather, such as this strawberry fruit leather I posted recently. Fruit leathers have a few advantages. First, I love the reduced amount of chopping. Slicing strawberries, like pictured above, and drying those, is a heck of a lot more effort than pureeing in a blender and pouring on a tray. You do need the extra trays, however, but I think they are worth the investment. I prefer the texture somewhat as well, because fruit leathers are done when they are still a bit tacky, and not brittle.

In class we made “pizza leather” which is 15oz of stewed tomatoes, 8 oz of tomato sauce, and dried herbs on top. It is a pretty tasty snack.

And once it is done. I think it would be delicious slapped on a toasted English muffin with some mozzarella cheese. mmmmmm.

Vegetables can be great to dehydrate to later use in things like soups. For these, we pretreated the celery by blanching for about a minute, but we did not treat the zucchini or onions.

When you want to use dehydrated vegetables, some times you will want to rehydrate them first. Soak them in 1.5-2 cups of water per cup of dried vegetables, and add more if needed. They should plump to the size before they were dehydrated. They can also just be put straight into soup or stew and rehydrate in the broth.

Zucchini chips are a great way to use up excess zucchini. You know that you will be rolling in it soon! My first one is about ready to harvest.

Dried foods should be stored in air tight, food grade storage containers. Canning jars are pretty great for this if you already have a lot on hand. Some times though, little critters can still get in there. Ewwww. Obviously, discard something this nasty.

Strawberry Freezer Jam

Freezer jam is a super quick and easy alternative to making canned jam. I love canning, and think everyone should learn how (do it, do it now!!) but there are also a few advantages to freezer jam. First, you don’t have to cook the berries at all. This means you can keep a little more of the natural consistency and taste of the uncooked berries. It’s also faster, and you don’t need a canner, jar lifter or anything like that. I think it’s a great gateway into canned jams, although I did about a million jars of canned jam before ever trying it. But, if you have a little bit of extra freezer space, all you need is the jars, pectin and the berries to make quick an easy freezer jam.

Ingredients:
4 cups crushed fruit
1.5 cups sugar
1 packet freezer jam pectin

For this endeavor I used Mrs. Wages freezer jam pectin, but Ball and many other brands also make freezer jam pectin.

First, wash, hull and crush the berries.

Separately, combine the sugar and pectin together and stir to evenly mix them.

Stir in the crushed berries and then continue to stir the jam for 3 minutes.

Now all you do is pour it in jars. Leave a half inch or so of head space for the jam to expand when it freezes. Put on the lids and bands. Let it set up at room temperature for a half hour or so prior to freezing it.  You can leave it longer if you want, just not longer than 24 hours. After that just pop it into the fridge or freezer. It will keep around 3 weeks in the refrigerator or a year in the freezer.

Easy peasy lemon squeezy. Now you really have no excuse to buy store bought jam anymore. This takes under a half hour and yields about 5 jars.
